This is an exciting one. An opportunity to taste beans that have been grown by the famous farmer; Nestor Lasso. Based in the mountains of the Huila region he is known for progressive farming pratises, premium quality cherries, and interesting varietals.
This naturally processed Ombligon is just that. Juicy and fruit forward, it screams Mango on the nose, and has the syruppy body of strawbs all with a dark chocolate undertone.
The Ombligon is grown on a microlot of less than 15ha, carefully hand picked and sorted for the ripest cherries before being left to dry in the sun to allow the fruit to desiccate. This intensifies the sugar content of the beans and there is a level of fermentation from wild yeasts present on the cherries. This concentrates sugar, and developes complex flavour components which are found in the final cup.
This bean makes a truly intriguing espresso which is delicious in a short drink like a cortado but is best celebrated in pourover or batch preparation in which the juiciness is celebrated most.
